Ingredients
For 2 servings
- 2 medium ripe bananas (about 240 g peeled)
- 2 eggs
- 60 g (¼ cup) smooth peanut butter
- 30 g (¼ cup) walnuts
- 10 g (2 tbsp) unsweetened cocoa powder
- 5 g (1 tsp) baking powder
- A little oil or butter for the dish, or parchment paper
Instructions
- 1Heat the oven to 200 °C (390 °F). Grease a small baking dish, about 15 × 15 cm (6 × 6 in), or line it with parchment paper.
- 2Put all the ingredients in a blender and blend until you have a smooth, thick batter. If you like some crunch, keep back a few walnut pieces for the top.
- 3Pour the batter into the dish, smooth the top and scatter over the reserved walnuts.
- 4Bake for about 20 minutes, until the cake has risen and a toothpick inserted in the center comes out with just a few moist crumbs.
- 5Let it cool in the dish for 10 minutes, then cut it into pieces.
Tips
- The riper the bananas, the sweeter the cake. Bananas with plenty of brown spots are ideal.
- To make one serving, halve all the ingredients and bake in a dish about 10 × 10 cm (4 × 4 in) for 15 to 18 minutes.
- Spread a little jam on top or serve with fresh berries. Toppings are not included in the nutrition values.
- The cake keeps in an airtight container in the fridge for up to 3 days and tastes great cold.
