Ingredients

For 1 serving

  • 200 g (a scant 1 cup) low-fat quark or cottage cheese
  • 25 g (just under 1 scoop) chocolate or vanilla whey protein powder
  • 5 g (1 tbsp) unsweetened cocoa powder
  • 50 ml (3½ tbsp) milk
  • 100 g (¾ cup) fresh raspberries
  • 15 g (3 tbsp) unsweetened shredded coconut
  • 15 g (about 12) almonds, roughly chopped

Instructions

  1. 1Put the quark, protein powder and cocoa in a bowl and stir until smooth and evenly brown.
  2. 2Add the milk a little at a time, stirring after each addition, until the cream is thick but easy to stir. If it is still too stiff, add another splash.
  3. 3Spoon the cream into a serving bowl and top with the raspberries, coconut and almonds.

Tips

  • For a silky, mousse-like texture, blend everything with a stick blender. This helps most with cottage cheese, which is naturally lumpy.
  • Put the bowl in the freezer for 20 to 30 minutes for a firmer, ice-cream-like dessert.
  • Frozen raspberries work too. Let them thaw for 10 minutes so their juice runs into the cream.
  • The coconut and almonds provide most of the fat. Use half as much of each to save about 90 kcal.
