Ingredients
For 3 servings
- 50 g (about ⅓ cup) pitted dates
- 1 tbsp (15 ml) milk, plus a little more if needed
- 40 g (2½ tbsp) smooth peanut butter
- 50 g (½ cup) oat flour or finely ground oats
- 30 g (1 scoop) vanilla or chocolate whey protein powder
- 10 g (1 tbsp) chia seeds
- 5 g (1 tbsp) unsweetened cocoa powder
- 10 g (1 tbsp) dark chocolate, finely chopped
Instructions
- 1Blend the dates with the milk in a blender or food processor until you get a smooth, sticky paste.
- 2Transfer the paste to a bowl, add the peanut butter and mix well.
- 3Add the oat flour, protein powder, chia seeds, cocoa and chopped chocolate and stir with a spoon as far as you can.
- 4Knead the mixture with your hands until it comes together into a smooth dough. If it stays crumbly, add a little more milk, one teaspoon at a time.
- 5Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1.5 cm (½ in) thick.
- 6Chill in the fridge for about 30 minutes, until firm, then cut into 6 bars.
Tips
- If your dates are dry or hard, soak them in hot water for 10 minutes and drain them well before blending.
- No oat flour? Blitz rolled oats in a blender for a few seconds.
- The bars keep in an airtight container in the fridge for up to 5 days, or in the freezer for up to a month.
- Almond butter or any other nut butter works instead of peanut butter.
