Ingredients

For 1 serving

  • 80 g (about 3 cups) cornflakes
  • 250 ml (1 cup) skim milk
  • 25 g (just under 1 scoop) vanilla or unflavored whey protein powder
  • 10 g (1 tbsp) chia seeds
  • 100 g (¾ cup) frozen mixed berries

Instructions

  1. 1Take the berries out of the freezer so they can start to thaw while you prepare the rest.
  2. 2Shake or whisk the protein powder into the milk until smooth, with no lumps.
  3. 3Put the cornflakes and chia seeds in a bowl, pour over the protein milk and stir.
  4. 4Let the bowl stand for about 10 minutes, so the chia seeds swell and the cornflakes soften.
  5. 5Top with the half-thawed berries and eat right away.

Tips

  • If you prefer your cornflakes crunchy, let only the chia and milk stand for 10 minutes and add the cornflakes just before eating.
  • Fresh berries work just as well. Blueberries, raspberries and strawberries are all good choices.
  • Instead of milk and whey, you can use 250 ml of a ready-made protein milk drink with about 25 g of protein.
  • Semi-skimmed (1.5%) milk adds about 35 kcal and 4 g of fat.
