Ingredients
For 1 serving
- 200 g (7 oz) lean ground beef (about 7% fat)
- 1 small red onion (about 70 g)
- 50 g (½ cup) plain dry breadcrumbs
- 1 egg
- 200 g (7 oz, about 1 large) potatoes
- Salt and pepper
- A side salad of your choice
Instructions
- 1Heat the oven to 250 °C (480 °F) and line a baking tray with parchment paper.
- 2Cut the potatoes into sticks about 1 cm (⅜ in) thick, pat them dry with a paper towel and spread them over one half of the tray. Season with salt.
- 3Finely chop the onion. Put it in a bowl with the beef, egg and breadcrumbs, season with about ½ tsp of salt and some pepper and mix until the mixture holds together.
- 4With wet hands, roll the mixture into 6 balls, then flatten each one into a small patty about 1.5 cm (½ in) thick. Place the patties on the other half of the tray.
- 5Bake for about 25 minutes, turning the patties and fries halfway through, until the fries are golden and the patties are browned and cooked through, 71 °C (160 °F) in the center.
- 6Serve the patties and fries with the salad.
Tips
- Let the mixture rest for 5 minutes before shaping. The breadcrumbs soak up the egg and the patties hold together better. If it still feels dry, add 1 to 2 tbsp of water.
- For crispier fries, toss them with 1 tsp of oil before baking. This adds about 40 kcal.
- Chopped parsley, a crushed garlic clove or a pinch of sweet paprika in the meat adds flavor without extra calories.
- The patties keep in the fridge for up to 3 days and are good cold, so they work well for meal prep.
