Ingredients
For 2 servings
- 200 g (7 oz) lean ground beef (about 10% fat)
- 1 tsp olive oil
- 1 can (400 g / 14 oz) peeled tomatoes
- 1 onion, finely chopped
- 1 carrot, grated
- Dried herbs (oregano, basil), salt and pepper to taste
- 100 g (3.5 oz) dry pasta of your choice (50 g per serving)
Instructions
- 1Heat the olive oil in a large pan and brown the beef and onion over medium-high heat for about 5 minutes, breaking up the meat as it cooks.
- 2Add the grated carrot, peeled tomatoes and dried herbs. Season with salt and pepper.
- 3Add a splash of water if the sauce looks thick, lower the heat and let it simmer for 30 minutes.
- 4While the sauce simmers, cook the pasta according to the package instructions.
- 5Serve the sauce over the pasta, with a side salad if you like.
Tips
- Weigh the pasta dry: 50 g dry is one serving and keeps the meal under 500 kcal.
- The sauce keeps for 3 to 4 days in the fridge, so it works well for meal prep.
