Ingredients
For 1 serving
- 120 g (4 oz) lean ground beef (about 10% fat)
- 1 medium zucchini (about 200 g)
- 1 onion, finely chopped
- ½ can (200 g / 7 oz) peeled tomatoes
- 1 tsp olive oil
- Spices of your choice (paprika, oregano, garlic powder), salt and pepper
- 20 g (¼ cup) grated cheese, such as mozzarella or kashkaval
Instructions
- 1Preheat the oven to 200 °C (400 °F).
- 2Heat the olive oil in a pan and sauté the onion until soft, about 3 minutes.
- 3Add the beef and cook until browned, then stir in the tomatoes and spices. Simmer for 5 minutes.
- 4Cut the zucchini in half lengthwise and scoop out the middle with a spoon to make two boats.
- 5Fill the boats with the meat sauce, sprinkle with cheese and bake for about 20 minutes, until the zucchini is tender and the cheese is golden.
Tips
- Chop the scooped-out zucchini flesh and add it to the sauce so nothing goes to waste.
- Using a nonstick pan lets you keep the oil to 1 tsp. With 1 tbsp of oil the meal is about 514 kcal.
