Ingredients
For 1 serving
- 200 g (7 oz) turkey breast, cut into strips
- 20 g (2 tbsp) unsalted peanuts
- 100 ml (scant ½ cup) light cooking cream (10–12% fat) or half-and-half
- 5 g (1 tsp) oil
- 80 g (2.8 oz) dry pasta
- Spices of your choice (salt, pepper, garlic powder, a pinch of chili)
Instructions
- 1Blitz the peanuts in a chopper until finely ground, then toast them in a pan with the oil for 1 to 2 minutes, until fragrant. Tip them out onto a plate.
- 2In the same pan, cook the turkey over medium-high heat until browned on all sides.
- 3Return the peanuts to the pan, pour in the cream and simmer for about 10 minutes, until the sauce thickens. Season to taste.
- 4Meanwhile, cook the pasta according to the package instructions.
- 5Serve the pasta with the turkey and peanut sauce on top.
Tips
- Chicken breast works just as well as turkey.
- Watch the peanuts while toasting: ground nuts burn quickly.
