Ingredients
For 1 serving
- 200 g (7 oz) skinless chicken drumstick meat (about 300 g / 3 drumsticks with the bone)
- 300 g (10.5 oz) potatoes, peeled and cut into chunks
- 150 g (5 oz) green beans
- 100 ml (scant ½ cup) milk, warmed
- 10 g (2 tsp) butter
- Salt, plus spices of your choice for the beans (garlic powder, paprika, pepper)
Instructions
- 1Preheat the oven to 220 °C (425 °F) and line a baking tray with parchment paper.
- 2Pull the skin off the drumsticks, season with salt and roast for 35 to 40 minutes, until golden and cooked through.
- 3Meanwhile, boil the potatoes in salted water until soft, about 15 to 20 minutes, then drain.
- 4Mash the potatoes with the butter and a pinch of salt, pour in the warm milk and whip with a hand mixer until smooth.
- 5Cook the green beans in a hot nonstick or grill pan for 5 to 7 minutes until lightly charred, and season to taste.
- 6Serve the drumsticks with the mash and green beans.
Tips
- Add more or less milk depending on how thick you like your mash.
- Any vegetable works instead of green beans: broccoli, carrots or a big salad.
