Ingredients
For 1 serving
- 200 g (7 oz) lean ground beef (5–7% fat)
- 30 g (¼ cup diced) gouda, cheddar or other semi-hard cheese
- 1 small onion (about 70 g)
- Salt and pepper
- 100 g (2 cups) mixed salad, such as lettuce, cucumber and tomato, to serve
- Lemon juice or vinegar for the salad
Instructions
- 1Finely chop the onion and cut the cheese into small cubes, about 5 mm (¼ in).
- 2Put the beef, onion and cheese in a bowl, season with about ½ tsp of salt and some pepper and mix with your hands until evenly combined. Don't overwork the meat, or the patties will turn out dense.
- 3Shape the mixture into 2 patties about 1.5 cm (½ in) thick and press a shallow dimple into the center of each so they stay flat as they cook.
- 4Heat a nonstick pan over medium-high heat and add the patties without any oil.
- 5Cook for 4 to 5 minutes per side, until nicely browned and cooked through, 71 °C (160 °F) in the center.
- 6Let the patties rest for a minute and serve them with the salad, dressed with a little lemon juice or vinegar.
Tips
- Keep the cheese cubes inside the patties. Any that sit on the surface will melt into the pan and burn.
- Fattier beef (15% fat) makes juicier patties but adds about 120 kcal per serving.
- A pinch of garlic powder or smoked paprika in the meat adds flavor without extra calories.
- Dressing the salad with 1 tsp of olive oil adds about 40 kcal.
