Ingredients
For 1 serving
- 2 flour tortillas (130 g / 4.5 oz in total)
- 150 g (5 oz) chicken breast, cut into strips
- ½ cucumber (about 80 g), cut into sticks
- ½ small red bell pepper (about 60 g), cut into strips
- 30 g (2 tbsp) sour cream
- 10 ml (2 tsp) mayonnaise
- 1 small garlic clove, crushed
- A few fresh basil leaves, chopped (or ½ tsp dried basil)
- Salt, pepper and a little oil or cooking spray for the pan
Instructions
- 1Season the chicken with salt and pepper. Cook it in a lightly greased pan over medium-high heat for 6 to 8 minutes, turning occasionally, until golden and cooked through.
- 2In a small bowl, stir together the sour cream, mayonnaise, garlic and basil.
- 3Warm the tortillas in a dry pan for about 20 seconds per side, so they fold without cracking.
- 4Spread the sauce over both tortillas, then lay the bell pepper, cucumber and chicken down the middle.
- 5Fold in the sides, roll the tortillas up tightly and cut them in half.
Tips
- Frying the chicken in a full teaspoon of oil adds about 45 kcal.
- Swap the sour cream and mayonnaise for 50 g of plain Greek yogurt to save about 85 kcal.
- To take them to work, wrap them tightly in foil and keep them in the fridge. They are best eaten the same day.
