Ingredients
For 1 serving
- 200 g (7 oz) chicken breast, finely diced
- 70 g (⅓ cup) white rice, uncooked
- 25 g (1 oz) bacon, diced
- 150 ml (⅔ cup) light cooking cream (10–12% fat) or half-and-half
- 15 g (3 tbsp) grated parmesan
- 1 handful (30 g / 1 cup) fresh spinach
- Salt, pepper and garlic powder
- Cooking spray or a few drops of oil for the pan
Instructions
- 1Cook the rice in plenty of salted water for about 12 minutes, then drain so the grains stay separate.
- 2Lightly grease a pan and cook the chicken over medium-high heat until lightly browned.
- 3Add the bacon and cook until crisp, then add the spinach and stir until it wilts.
- 4Pour in the cream, season with salt, pepper and garlic powder and simmer on low heat for about 10 minutes.
- 5Put the rice on a plate, spoon the chicken and sauce over it and finish with the parmesan.
Tips
- Sliced mushrooms go really well in the sauce.
- Swap the bacon for smoked sausage, or the rice for pasta.
