Ingredients
For 1 serving
- 75 g (2.5 oz) whole-wheat or white sandwich bread (about 3 slices)
- 100 g (3.5 oz) thinly sliced smoked salmon
- 40 g (about 2½ tbsp) Greek yogurt
- ½ small garlic clove, finely minced
- 1 tbsp chopped fresh parsley
- 1 tsp lemon juice
- A handful of arugula (about 10 g / ½ cup)
- Black pepper to taste
Instructions
- 1In a small bowl, stir together the Greek yogurt, garlic, parsley and lemon juice, then add a pinch of black pepper. There is no need for salt, because the salmon is already salty.
- 2Toast the bread in a toaster or a dry pan for 2 to 3 minutes, until golden and crisp.
- 3Spread the yogurt sauce over the warm toast.
- 4Arrange the smoked salmon on top, scatter over the arugula and serve right away.
Tips
- Spread the sauce just before serving, so the toast stays crisp.
- For a milder sauce, use a little chopped spring onion or chives instead of garlic.
- The fat content of smoked salmon varies a lot. The values above are for farmed salmon, while wild salmon has about 90 kcal less per 100 g.
- A few capers or thin slices of red onion go well with the salmon.
