Ingredients
For 1 serving
- 75 g (2.5 oz) whole-wheat sandwich bread (about 3 slices)
- 4 medium eggs
- 40 g (1.5 oz) sliced ham
- 30 g (2 tbsp) sour cream
- A little oil or cooking spray for the pan
- Salt and pepper to taste
- A side salad of your choice (lettuce, tomato, cucumber)
Instructions
- 1Lightly grease a nonstick pan and heat it over medium heat. Crack in the eggs and fry them the way you like, about 3 to 4 minutes for set whites and runny yolks. Season with salt and pepper and slide them onto a plate.
- 2In the same pan, toast the bread for 1 to 2 minutes per side, until golden and crisp.
- 3Spread the sour cream over the warm toast and lay the ham on top.
- 4Top with the fried eggs and serve right away with the salad.
Tips
- Frying in a full teaspoon of oil adds about 40 kcal. A nonstick pan with a light spray of oil keeps the meal close to the numbers above.
- Swap the sour cream for nonfat Greek yogurt to save about 40 kcal and add 2 g of protein.
